Cheese Update

Our cheese tastes different today!  One day after being cut open, its less sharp and tastes more like cheddar and less like feta.  Odd, isn't it?

maybe some reaction to the exposure to air? which do you like better--the "feta" or the "cheddar"?

I prefer it now, like cheddar.

That cheese seems to taste different everyday. Its got a different sort of tang to it now.

The wax was probably holding in evolved gases such as ammonia and methylamine. Open the wax, the gases come off.
